The unique climate of the state of Jammu and Kashmir has suitable for Chilli cultivation. Due to the cool and ideal summer temperature, the growth of plants, range, and color maturity is excellent, resulting in high yield and quality fruits, enriched with carotenoid pigment capsanthin. Kashmiri chilies are known for their bright red color and moderate pungency, actively being used in high-class industrial and processed products. In recent times, numerous small-scale industries across the various districts of Kashmir valley are engaged in the processing, packing, and exporting of qualitative Chilli powder and earning worth millions of rupees. Hundreds of tonnes of dry Chilli are exported to metropolitan cities like Delhi, Mumbai, and other Northern Indian cities for blending with other varieties to give rich color to the powder. Kashmiri Lal Mirch is also known by the typical name “Deggi Mirch”
